WW Weigh In

I didn't forget to weigh-in Friday, I just was so busy I didn't get to posting it. I weighed in at 211.6, equaling a 2.4lb loss. The weekend wasn't too bad, yesterday wasn't great, but today is going to be & I am headed to the gym today even though I can only be there apx 15 minutes. It will give me a extra few miles.

I am having a hard time pushing through this last week of my 100 mile challenge. I really do have commitment issues, but I am not cheating on this and I am going to follow through with it. I am 13 miles away from 100 as it sits right now.

Better than Great, Healthy Pizza Crust

I normally don't post more than one post per day, but I didn't want to group my ideas together but still wanted to share each of them. Yesterday I stumbled upon a Cauliflower Pizza Crust on Examiner.com, doesn't sound that great, right? But OH MY GOSH was it better than great! Luckily Steven is pretty daring when it comes to new foods & recipes and this was not exception. This was the recipe I made and it serves apx 2:

Crust:
1 cup mashed, unpacked cauliflower
1 cup Italian or Mozzarella cheese, shredded
1 egg
Italian season & Garlic Powder

Mix, then thin out on a cookie or pizza sheet. Remember the cheese will melt and your crust will thin and spread a tad bit more than before cooking. Cook at 450* for 10-15 minutes, until it starts to become golden brown.

Alfredo Chicken Pizza:
1/2 lb diced and cooked chicken (any meat to top pizza will need to be cooked before topping)
Alfredo sauce (we used a powder packet mix, used low fat buttermilk instead of milk and added a little flour to help thinken sauce)
Red Onions
Fresh diced tomatoes
Real bacon bits
Fresh diced mushrooms
Shredded Italian or Mozzarella cheese ( if you are calorie or Point counting remember there is cheese in the crust already)

It was amazing! The husband was incredibly surprised and said the crust tasted like a more seasoned bread & the pizza was restaurant style. I was very proud of my self for finding & trying the recipe & now we can have pizza all the time. It is now a comfort food without the guilt.

I'd love to hear if you tried it and how you liked it.
Enjoy!

Afternoon Date Idea

I was catching up on my reading and came across a great idea for an afternoon date. Stephanie on her blog Unveiling the Diva mentioned Geocaching. What a great idea!

"Geocaching is a high-tech treasure hunting game played throughout the world by adventure seekers equipped with GPS devices. The basic idea is to locate hidden containers, called geocaches, outdoors and then share your experiences online. Geocaching is enjoyed by people from all age groups, with a strong sense of community and support for the environment." ~Geocaching.com

It would be a great way to get out in the sunshine, get a little exercise - mentally and physically and enjoy the ones you are with.

Monday

Well Im still on the wagon with sticking to Weight Watchers, my usually way on doing it is doing really, really good & sticking to or coming in right under Points and then on the weekend I get to cut loose just a little & still consider what I eat but not count everything that enters my mouth. This has worked well for me the last two times I stuck to WW for a long period of time. This is why I also like to weigh in on Friday mornings, so I then have the rest of the week to work off my weekend. I didnt not count this past Friday as a weigh in though because I was not on the wagon for a full week, so my first weigh in this Friday will be for the past 10 days. I know it will be loss but hopefully it will be a good one & give me that jump start I would love. Either way though I am sticking to this & fighting it out.

I have to brag on myself a little today too (if I don't who will, right?). I had a pretty busy and kind of stressful day and still stayed on track, resisting the temptations of a quick meal over a healthy meal. I still ended up with a quick meal but it was a thins, turkey, bacon bits & melted WW chesses sandwich with a low fat yogurt. I did snack on one of my son's chicken sticks for dinner but, it was small and held me over until dinner.

A Neat Halloween Tradition

I don't remember where I came across this idea at but I thought it was very neat & wise.

After the kids get back from trick-or-treating, what is the first thing they do? I remember the first thing we would do is dump out our bag to discover what had been deposited in it by the participating treat givers. Well, the idea is to let our child pick out a piece of candy or two to set aside for each of the next 6-7 days and put the rest out on the porch that evening or where ever you choose so the Halloween Witch, Ghost or Goblin can pick it up and in exchange leave a neat gift, something such as a small toy, a book or anything else not filled with sugar. Kind of the same concept of the Tooth Fair, leave her something & when she takes it she leaves you something in return. You can come up with your own unique story about why the Halloween Witch, Ghost or Goblin needs the candy and what they will do with it. You can then donate the a charity or even someone in the office that has a candy dish. I plan on starting this next year when my son can trick-or-treat or even understands the concept of Halloween.

On a little bit of a different note I am thinking I am going to skip the gym today, my knees have always bothered me, even as a child & now that I weight more than I should, they hurt more than they should. They seem really sore today, and my workouts tend to hurt if I push my self too hard, as well as I could end up putting myself out of working out for longer than a day if I push too hard & ignore the pain. So I am going to listen to by body and enjoy the afternoon getting some things done that I have been putting off, I at least wont be sitting on my butt all evening.

W5D5 Day 1 of Weight Watchers

I have decided to find my Weight Watchers book & start back at it. I am still keeping my weigh-in day as Friday, so my first WW week will be a few more days than a week. I am not going back to meetings, but I am going to use my blog to keep track, accountability & connections. My weigh-in today put me at 216.2, not as bad as I thought it was going to be, but still higher than just a few weeks ago.

Something in my favor is that I am trying so hard to follow through & finish my 100 mile challenge. I told Steven last night that I have commitment issues, I have a hard time following through with things I start. So, just finishing this challenge is going to be huge for me. I have 3 weeks left & 41 miles left to go. I have exercise in my corner this time though, before I have just done WW, and fairly well, but without exercise. I'm excited to see what the difference will make.

W4D4

This weekend was nice, the weather was beautiful & I got a lot done. Eating wise, I don't feel like the weekend was a wash, I did a lot of moving & did my best to not over eat. I may have a little over ate for lunch yesterday, but other than that, good. I introduced my son to candy corn & he loves it. I had a little this weekend too, I think it helped bring the sugary cravings & weak will bad today. I shouldn't think of today as a failure, but it's hard. I endulged in 2 prices of buttered toast this morning, a can coke & 5 mini candy bars (not all at once). But I'm here at the gym & I'm peddling harder than usual. I'm alway excited when I am able to add more miles to my tracker. I am down to 4 of 7 weeks left to get to & hopefully over 100 miles by 10-30. I plan on getting a message if I make it to the 100 & for 110 a massage & manicure & if I can manage 120 then it's a massage & pedicure. 1 month to go - relaxing & accomplishment here I come.

W4D1

I didnt do as bad as I though I did this weekend. I gained 2.6 lbs, so that leaves me with 8.3 until I hit my first 5%. I am going grocery shopping today so that should get me set up for dinners & lunches for next week. Maybe I will even see about borrowing on of my parents bikes & taking a bike ride with Landen this weekend. We shall se.
